White Wine (French Recipe)
14 boxes 12 oz. Del Monte seedless raisins or 11 boxes 5 oz. muscal Sun-Miad raisins(seedless)
8 lbs granulated sugar
5 lbs good grade rice
5 lemons, strain and use juice only
4 cakes yeast
1 - Dissolve the sugar in 5 gallons of water in an 8 gallon crock or jar
2 - Add the raw rice to it and mix well with a wooden spoon.
3 - Chop the raisins fine in aq wooden bowl and add to the mixture strained
lemon juice, then add 4 yw=east cakesx dissolved in a cup of water.
4 - Mix well and let stand for 48 hours, then stir well again.
5 - Repeat this until fermentation stops, which will be about 18 days.
6 - Strain off solid marrer and bottle carefully.
7 - Examine often.
