Shallow Fried Fillet of Sole
6 thin fillets of flounder
1 cp tomato catsup
1 cp dry, fine breadcrumbs
parsley for garnishing
salt and pepper to season
1 - Dip each slice flounder into catsup, then breadcrumbs which have been mixed with salt and pepper to season.
2 - Cut flounder as nearly 1X2X1/4 - inch as possible without wasting it.
3 - Shallow fry in hot shortening. 385 degrees F., 1 inch deep in heavy frying pan, until golden brown.
4 - Drain on absorbent paper, serve hot, garnished with Parsley.
