Fried Soft Shell Crab

1 cp milk
salt and pepper
a few slices of garlic
Fried soft shell crab is one of the dishes for which New Orleans restaurants are famous.
Served with tartar sauce they make a delicious luncheon or dinner dish.
1 - First remove the soft feelers or :dead men" you will find under each side of the shell,
then take out the eyes, mouth, and sand bag under the mouth.
2 - Wash sell, soak inn a mixture made of 1 egg, cup milk, salt and pepper and a few slices of garlic.
3 - Dip them in flour, fry in deep fat for about 20 minutes until brown.
4 - Drain on paper and serve garnished with sliced lemon and minced parsley.
5 - Serve with tartar sauce
