1 cp cooked salmon
1 tbsp butter
1 tbsp flour
1/4 cp milk or water
1 tsp lemon juice
1/2 tsp salt
1/8 tsp pepper
1 - Make a roux with the butter, flour and milk.
2 - Put salmon into a bowl and add the sauce, lemon juice and seasoning;
mix with a fork until salmon is well broken.
3 - Set aside and when cold, mold into the desired shapes; roll on bread crumbs,
then in egg beaten with 1 tbsp cold milk, then in bread crumbs.
4 - Fry in deep fat at 385 degrees F. until brown.
