Egg Sandwich Filling
3 hard boiled eggs
2 cps mayonnaise
8 sweet pickles, sliced
15 stuffed olives
1/2 cp sweet vinegar from pickles
1/4 tsp each of salt and black pepper
1 - Mash yolks of eggs up fine, add mayonnaise slowly, then sweet vinegar
then whites, chopped very fine, olives and pickles, salt and pepper.
2 - This makes a delicious spread for very thin sandwiches for afternoon tea
or lencheon or picnics, as they keep for hours without deteriorating.
