Baked Beef Round
6 lb beef round
1 medium sized onion
1 pod garlic
1/2 cp lard
1 - Make small holes in the beef round, and insert a piece of onion and a small piece of garlic in each one.
2 - After this is done be sure you have cut away all the tough pieces of string and gristle from outside of beef round
3 - Mix lard with 1 tsp salt and 1/2 tsp of black pepper.
4 - Place in hot oven and bake for 45 minutes, then remove for 5 minutes from oven and pour over the roast gravy given below:
5 - After returning roast to oven use a moderate oven, and baste with gravy every 15 minutes.
6 - Serve dry in separate dish and serve gravy in gravy dish.
Make roux in iron skillet with 1 tbsp lard, 2 tbsp flour, 1 chopped onion, 2 tbsp tomato paste, 1 green pepper and 1 qt hot water.
Cook 15 minutes in skillet then pour into roast pan, and bake as directed above. This roast is delicious cold.
Serve rice with this gravy.
Do not bake more than 1 hour after you added the gravy.
