Preparing Shrimp for Cocktail
Prepare shrimp for coctail as follows:
First remove heads, shell and black in tails. This black will come out easily if shrimp are fresh.
In all cases remove this even if you have to cut top of tail with a knife.
Then wash tails and put in large pot of cold water.
Add 1 sliced lemon, half bell pepper, half onion, lots cayenne pepper and salt.
A stalk of celery may also ben added, then cook over fire boiling at least 30 minutes.
Remove from fire and let cool in same water, then drain and place shrimp tails on ice for cocktail or salad.
