any leftovers (meats or poultry)
1 tbsp shortening
1 pod garlic
1 stalk celery
parsley to taste
1/2 bell pepper
3 boiled Irish potatoes
1 cp bread or cracker crumbs
salt and pepper to taste
1 - Rub meat or puoltry with vegetables through the meat chopper, then add the potatoes mashed.
2 - Season and stir in the beaten egg in the mixture.
3 - Shape in small balls, roll in cracker or bread crumbs, fry quickly in deep hot shortening until golden brown.
4 - Drain on heavy brown kraft paper. Serve hot.
