Spaghetti a la Creole
1 lb small spaghetti
1 can Italian tomato paste
6 shallots or 1 large onion
2 or 3 large green peppers
salt, pepper and 1/2 pod garlic sliced thin
2 tbsp salad oil
1 - To 2 quarts water add about tablespoon of salt. Drop in spaghetti, boiling until done.
2 - While this is boiling, prepare tomato sauce.
3 - Put in large iron skillet, oil and sliced onion. No roux in this recipe.
4 - Fry until onion begins to brown, add salt, pepper, green peppers and tomato paste.
5 - Fry until a rather dry mass. At this point add 1 cp boiling water.
6 - Cook again until dry. Strain spaghetti thru collander, add to tomato sauce, cook and stir
for 10 minutes and serve.
Oysters may be added to sauce to great advantage.
