This is the famous Creole -- nit French dish. Seems to be known only to the Creoles,
and is with them a favorite dish for luncheon.
4 cps boiled rice
1/2 lb raw or boiled ham
1/2 lb small sausages, sliced
2 green peppers
4 green onions
2 medium dry onions
salt and pepper
1 can tomato paste
1 - The rivce must be boiled before you start to make your jambalaya.
2 - Boil 3/4 cups rice, and have already cooling.
3 - Then put in iron skillet 2 tbsp lard or bacon grease, fry chopped onion until edges begin to brown,
add tomato paste or canned tomatoes, chopped green peppers, sausage and ham.
4 - Fry, stirring well all the time, for 15 or 20 minutes.
5 - Then add the boiled rice, turnn the gas down, cook slowly for almost an hour, stirring every now and then.
A simple luncheon menu follows:
Head lettuce, with mayonnaise, Jambalaya, hot tea,lemonade or ice tea, toasted saltine crackers and crabapple
plum or mayhaw jelly.
