String Beans a la Creole
The Creole cooks vegetables almost invariably with a slice of dry salt pork.
Tahe 2 lbs string beans prepare, put in pot with 3 pints cold water, a slice
of salt pork 1 inch thick and cook slowly for 2 hours. Taste and add salt and
black pepper if needed. Cook 30 minutes more and serve.
The same method is used in cooking cabbage, which is invariable served with rice.
If using waterless cooker drop snapbeans into hot grease with all seasoing, cover
and cook slowly without water. Should only take 1/2 hour to cook this way.
If water becomes necessary only a half cup need be added, snapbeans retain their
fresh flavor if cooked in a waterless cooker.
