Red Beans a la Creole
Put 1 lb red beans in 2 qts of cold water (wash well first) and boil for one hour and a half on a slow fire.
Then chop 2 medium sized onions or 8 or 10 green onions, put 1 rounded tbsp lard in skillet, and add
heaping tbsp flour for a "roux" -- stir until dark brown, then stir in the onions, fry until onions start to brown at
edges, add about a cup of the bean water, stir well until well mixed, then pour all this into the beans, add salt
and pepper enough to taste, let cook 20 minutes more, and serve with rice.
