Caramel Sweet Potatoes
Take 4 large or 8 small sweet potatoes, put in a pot of cold water to boil.
When soft enought to stick a fork into, draw the water off, cool enough to handle,
split in 4 sections length-wise, and fry in deep lard or frying oil. Drain on brown paper,
a paper bag set on a dish is best, then put on hot fire or iron frying pan or skillet,
1 1/2 cps sugar and stir until brown. Add 2 cps hot water, stirring until all lumps are
dissolved, then boil down slowly for 10 minutes, add the potatoes, cover and simmer
very slowly without stirring for 15 minutes, and serve.
