Plantation Potato Pone
I have named this dish Plantation Potato Pone because I have never seen it served anywhere except
at the tables of sugar planters. It may be that it is known to others but not within my experience.
Grate about 6 large raw sweet potatoes, mix with 2 cps sugar, 1 1/2 cps milk and 2 tsp nutmeg.
Bake in pudding pan for about 2 1/2 hours. The pone requires rather a hot fire. It is a most delicious
dish, but requires in the grating so much of the cooks time that it has not been used as much as it
should be in these days of few servants. One may boil or bake the potatoes instead of grateing them
making it easier. In this case cream thoroughly, and add 1/2 lump of butter and a dash of cinnamon
instead of nutmeg and topped with marshmallows. You will need to bake only until the marshmallow
topping is toasted,
