Sweet Potato Croquettes<*
Take 6 medium sized sweet potatoes, or enough for 4 teacups full after they
are boiled and mashed, and set to boil until soft enough to stick a fork into,
drain water off, set to cool until cool enough to handle. Peel, mash with potato masher
and set on ice for 2 hours, about the time you wish to use them.
These croquettes must be fried as soon as made up or they will get too soft to handle.
Add to the cold mashed potatoes the following: 1 cp sugar, 1 tsp salt, 1 cp chopped pecans
or walnuts. Make immediately with the hands into the proper croquette shape, roll well in
sifted flour, then fry immediately a nice brown in deep hot fat or frying oil.
These are delicious when served with stewed chicken and rice and gravy.
