Nut and Potato Croquettes
2 cps hot mashed potatoes
1/4 cp cream or milk
1/2 tsp salt
1/8 tsp pepper
few grains cayenne
yolk of 1 egg
1 - 3 cps chopped pecan nut meats
1/2 tsp Royal Baking Powder
1 - Mix all ingredients with fork until light.
2 - Shape as for croquettes.
3 - Roll in bread crumbs
4 - Dip in egg which has been mixed with a little cold water
5 - Roll in bread crumbs again and fry in deep hot fat atm 385 degrees F. until brown.
6 - Drain on unglazed paper and serve.
