Old-Fashioned Sponge Cake
2 1/2 lbs sugar
1 3/4 lbs flour
1 cp water
2 heaping tsp baking powder
2 tsp vanilla essence
1 tsp salt
1 - This cake recipe has come down from colonial days, is very delicious, and will serve 30 people.
2 - Baked in shallow square pand, cut in squares when cold andn ice.
3 - Beat yellows of eggs well, slowly add, beating all the time, the sugar, until the mixture is creamy.
4 - Sift flour and add slowly first a cup full of flour, then some of the whites, which have been beaten stiff,
then a cp of cld water and baking powder.
5 - Bake in moderate oven, allow to stand for several hours, then remove from pan, cut in squares,
if desired anfd ice.
