1 cp flour, measure before sifting
1/2 cp butter or oleo
1 cp water
1 - Set water and butter on stove, and as soon as it boils, stir flour in, and continue to stir until
the paste leaves the side of the pot.
2 - Take off stove, allow to cool, then beat in, one at a time, the 5 eggs(do not separate the eggs)
and add a small pinch of soda.
3 - Drop into greased pans with a teaspoon and bake in moderate oven until they are light brown.
4 - Don't take them out of the pans until they are cold.
5 - When cold, fill with the following custard made in a double boiler:
2 cps of milk
yolk of 2 eggs
1 cp sugar
2 level tbsp cornstarch dissolved in 1/2 cp water
2 tsp vanilla
If you want chocolate eclairs, add heaping tbsp ground chocolate to half the mixture when hot,
and take some of the dough in long eclair shape.
This recipe never fails if followed carefully.
