No-Egg Ginger Bread
1 1/2 cps New Orleans Syrup or Molasses
1 cp lard or oleo
1 1/2 cps sugar
2 cps or 1 pound raisins
2 1/2 cps water
2 tsp cinnamon
2 tsp ginger
1 tsp cloves
1 tsp salt
1/4 tsp soda
2 heaping tsp baking powder
Enough sifted flour to make consistency of any other cake dough. Thick enough to
put in pans with spoon, and too thick to pour.
1 - Put water in pot on stove, wash raisins and put them in the water.
2 - Cook slowly until water comes to a boil.
3 - Have lard, syrup, sugar, spices, salt in deep bowl, pour in water and raisins, stir and mix well.
4 - Let cool for 15 minutes, add soda, baking powder and sifted flour.
5 - Bake in slow oven in flat pans or muffin rings.
