Plantation Puff Cakes (2 cakes)
Take 2 thick layer cakes made from recipe of Old Fashioned Sponge Cake.
Take of layer tin in which they have been baked and place on outside of pan upside down.
Spread layer of chopped pecans 1/4 inch thick on top of each layer, and spread on each cake
a meringue made with:
3 egg whites
1 1/2 cps sugar
1/2 tsp almond extract
1 - Beat egg whites 5 minutes then add about every 2 minutes a tsp of sugar, beating hard.
2 - Spread this meringue on each cake and bake very slowly with a very low flame.
3 - Meringue should take 20 minutes to brown.
