Lemon or Orange Custard Pie
2/3 cp sugar
1/2 cp flour
1 1/2 cps milk
1 cp orange juice
1 tsp grated orange or lemon rind
1 tbsp butter
4 tbsp sugar
1 - Into top of double boiler put sugar, flour and salt to taste, slowly add milk, stirring well;
add orange rind and juice and cook until the mixture has thickened. 2 - Add butter and pour into unbaked crumb crust.
3 - Make meringue of remaining egg whites and 4 tbsp sugar, spread over pie and sprinkle
reserved crumbs over.
4 - Bake in oven until meringue is light brown.
