This method of cooking cocoanut pie seems to belong to New Orleans and its vicinity.
4 cps grated cocoanut
1 1/2 cps sugar
3 cps milk
pinch of salt and teaspoon vanilla essence
1 - Use whole eggs.
2 - Beat them well, add sugar, milk, cocoanut, salt and essence.
3 - Have ready tin pie plates lined with raw pie crust pour mixture in,
set in hot oven to cook about 20 minutes
4 - When crust is brown and middle of pie seems solid, the pie is done.
5 - Servem either hot or cold.
