juice of 3 lemons
1/2 cps sugar
1 qt milk
1 - Mix juice and sugar, stirring constantly while slowly adding very cold milk.
2 - If added to rapidly, the mixture will curdle, however this does not affect quality.
For orange or pineapple sherbet use 2 cps strained fruit juice and 1 tbsp lemon juice;
reduce milk to 3 cps.
