Creole Pecan Pralines
2 cps of yellow clarified sugar
4 cps of shelled pecans
1/4 cp of black molasses
1 cp of boiling water
1 - Put the sugar in a saucepan, and add boiling water.
2 - Stir well, then place it on the stove.
3 - Add the molasses.
4 - Stir several times until the syrup forms balls in its water.
5 - Remove from fire, add nuts.
6 - Drop 2 tablespoonfuls on a buttered marble or porcelain slab, to form pralines.
7 - Remove from the slab almost at once.
