Candied Orange or Lemon Peel
peel of 4 oranges or 6 lemons
1 cp sugar
1/2 cp water
1 - Cut the peel and cover with cold water.
2 - Boil slowly until tender.
3 - Drain, cool enough to handle, and remove with a spoon the white lining of peel.
4 - Cut into thin strips
5 - Boil cup sugar and half cup water together until they form a heavy thread.
6 - Add peel and cook 5 minutes.
7 - Drain and roll in sugar.
8 - Use the syrup for flavoring icings.
