Schnitz un Knepp(Apples and Buttons)
3 lbs ham
1 qt dried apples
2 tbsp brown sugar
2 cps flour
milk enough to make fairly moist, stiff batter
4 tsp baking powder
1/4 tsp pepper
1 egg, well beaten
3 tsp melted butter
1 tsp salt
1 - Pick over and wash dried apples.
2 - Cover with water and let soak over night or for a number of hours.
3 - In the morning, cover ham with cold water and let boil for 3 hours.
4 - Add the apples and water in which they have been soaked and continue to boil for another hour.
5 - Add brown sugar.
6 - Make dumplings by sifting together the flour, salt, pepper, and baking powder.
7 - Stir in the beaten egg, milk, and shortening.
8 - Drop the batter by spoonfuls into the hot liquid with the ham and apples.
9 - Cover kettle tight and cook dumplings for 15 minutes.
10 - Serve piping hot on large platter.
