Booya Shenkel (Boys Legs)
3 lbs stewing beef
12 medium sized potatoes
3 tbsp butter
2 tbsp minced parsley
1 small onion, minced
2 1/2 cps flour
2 tsp baking powder
1/2 tsp salt
4 tbsp shortening (butter and lard mixed)
7 or 8 tbsp cold water
1 cp diced stale bread
3 tbsp butter or bacon drippings
1/2 cp milk
salt and pepper
1 - Wash the meat, cover with water, add seasonings to taste and cook slowly for several hours.
2 - Wash and peel the potatoes and cut into thin slices.
3 - Cook until tender
4 - Drain off all the water, add 3 tbsp butter, salt, and pepper to taste, parsley and onion.
5 - Mix well.
6 - Beat the eggs, add to potatoes and beat mixture lightly.
7 - Let stand until pastry is made.
8 - Sift together the flour, baking powder and 1/2 tsp salt.
9 - Work in the 4 tbsp of shortening and then add the water, using only enought to hold dough together.
10 - Roll thin on a floured board and cut into large circles, about 10 inches in diameter, spread with
some of the potato mixture, fold dough to form a semicircle, pressing the edges together with prongs of a fork.
11 - Drop into the hot meat and broth, cover pot closely and boil 25 minutes.
12 - While these are cooking, make a sauce of 3 tbsp of butter or bacon drippings, add the bread cubes and brown
13 - Stir in the milk.
14 - Arrange the "Boova Shenkel" on a platter and pour over all the milk sauce.
15 - Serve at once.
