Stuffed Beef Heart
1 beef heart
1 cp cracker crumbs
1/2 cp white sauce
salt and pepper
1 cp roasted chestnuts
1 - Soak tre heart in cold water about an hour.
2 - Wash thoroughly and remove the muscles and arteries.
3 - Make a filling of the above ingredients and fill the heart.
4 - Fasten securely.
5 - Cover with boiling water and boil for 10 minutes.
6 - Reduce heat and simmer until tender.
7 - Remove heart from water half hour before serving and sprikle with cracker crumbs, salt and pepper.
8 - Bake in a moderate oven (350 degrees F.) until brown.
