York Pot Roast, Spiced
5 lbs beef
1 onion, sliced
3 bay leaves
1 tsp whole peppers
vinegar and water
salt and pepper
1 - Rub the meat thoroughly with salt and pepper and put in an earthen dish.
2 - Add the onion, bay leaves and whole peppers.
3 - Take equal parts of vinegar and water and pour over the meat.
4 - Let stand in this liquid for 24 hours.
5 - Put meat in roasting pan and sear well in hot oven (400 degrees F.).
6 - When well browned, add a little of the spiced vinegar.
7 - Cover pan tightly and cook slowly for 3 1/2 hours or until meat is tender.
8 - Add more of the vinegar if necessary.
9 - When cooked, remove meat to a platter and thicken liquid with 1 tbsp flour.
