Roast Pork II
6 lbs pork loin
salt and pepper
2 onions, sliced thin
1 tsp ginger
1 - Wipe meat with wet cloth and season well with salt and pepper and the ginger.
2 - Dredge with flour and place in roasting pan in a hot (400 degrees F.) oven until meat is brown.
3 - Reduce the heat to moderate oven (350 degrees F.) and roast for 3 hours.
4 - Add 1 cp hot water after the first hour and baste every 15 minutes.
5 - When the roast is finished, remove to hot platter and to the liquid in the pan add 2 tbsp flour, stirring until blended.
6 - Pour in 1 1/2 cps of water and cook, stirring constantly until mixture is thick.
