1/2 hog's head, liver, heart, and sweetbreads
2 parts yellow cornmeal/1 part buckwheat flour
2 tsp salt
1/2 tsp pepper
1 tsp sage
1 tsp mace
1 - Prepare meat as for Scrapple II (see recipe elswhere), using 1/2 hog's head,liver, heart, and sweetbreads.
2 - When cooked, chop fine and weigh the meat.
3 - For every 3 lbs meat use 2 lbs of meal, salt, pepper, sage, and mace.
4 - Cook s;lowly over low flame about 1 hour.
5 - Pour into pan and let stand until cold.
6 - Cut in slices and fry until golden brown.
