Stuffed Liver (G'shtuptaful Lew'r)
1 calf's liver
bread stuffing(recipe elsewhere)
3 strips salt pork
flour to dredge
salt and pepper
1 - Wash the liver in cold salted water and dry well.
2 - Make an incision in the thickest part, using a sharp knife.
3 - Fill with bread stuffing.
4 - Season well with salt and pepper and dredge with flour.
5 - Place in roasting pan and place strips of pork on top.
6 - Add a little water and roast in a hot oven (400 degrees F.) for 15 minutes.
7 - Reduce heat to moderate oven (350 degrees F.) and continue cooking for 45 minutes.
8 - Serve with cooked spinach and baked potatoes.
