1 1/2 lbs liver
1 large onion, diced
1 tbsp butter or other shortening
2 qts bread crumbs
2 eggs, well beaten
1/2 cp flour
salt and pepper
1 - Put the liver through a meat chopper.
2 - Beef liver may be used.
3 - Fry the onion in the shortening with the breadcrumbs.
4 - Combine the liver and the eggs and mix well.
5 - Add the onion and breadcrumbs.
6 - Season to taste.
7 - Stir in enough flour (using more than 1/2 cop if necessary) to make a batter stiff enough to drop from a spoon.
8 - Drop from a tablespoon into a kettle of hot broth or soup and cover kettle tightly.
9 - Cook for 30 minutes.
10 - Shake pan frequently to prevent sticking.
