Roast Leg of Lamb II

salt and pepper
2 tbsp shortening
1/2 cp hot water
1 tsp Worcestershire sauce
2 cps water
1 - Wipe the lamb with a clean, damp cloth.
2 - Season well with salt and pepper and dredge with flour.
3 - Place in roasting pan and add shortening
4 - Bake in a very hot oven (450 degrees F.) for 15 minutes.
5 - Reduce the heat to moderate oven (350 degrees F.) and finish baking, allowing 20 minutes per pound.
6 - After the first 15 minutes add 1/2 cp hot water andthe Worcestershire sauce.
7 - Baste every half hour with this sauce, adding more water as necessary..
8 - When finished remove lamb to a hot platter.
9 - Add 4 tbsp flour to fat in pan and mix well.
10 - Add 2 cps water abd bring to a boil, stirring constantly.
11 - Season with salt and pepper and serve with the lamb.
