To Pickle Cured Bacon
100 lbs sides of bacon (from fresh killed country hogs).
Lay the sides of bacon on a board and rub lightly with fine salt. Let stand for 48 hours.
8 lbs salt
3 lbs brown sugar
3 oz salt peter
4 gallons spring water
1 - Mix the first 3 ingredients thoroughly and dissolve in water.
2 - Bring to a boil and cook for 15 minutes.
3 - Skim and let dool.
4 - Place the bacon in a clean oak barrel and pour the liquid over the meat.
5 - Place a heavy weight on the bacon to keep it under the brie.
6 - Bacon prepared like this will keep for about one year.
7 - Have sections of bacon smoked at smoke house as needed.
