Fried Rabbit II
flour for dredging
1/4 cp lard or butter
sal and pepper
1 tbsp flour
1 cp water
1 - After rabbit has been dressed and cut in pieces for frying, soak in salt water eight to ten hours.
2 - Remove from water, drain and roll in flour.
3 - Place in hot skillet containing lard or butter, cover and fry to a golden brown, turning frequently.
4 - Season with salt and pepper.
5 - To make gravy, removee the rabbut when finished to a hot platter and stir into the hot fat 1 tbsp flour.
6 - Add 1 cup water and cook until mixture thickens.
