German Noodle Ring (With Cheese Sauce)
1 cp egg noodles
3 cps boiling salted water
3 tbsp butter
3 tbsp flour
1/2 tsp salt
1/2 tsp paprika
1 1/2 cps milk
2 eggs, well beaten
1 pkg American Swiss Cheese (1/4 or 1/2 lb)
1 - Boil the noodles in the salted water and cook about 10 minuets until tender.
2 - Drain and put into well greased ring mold.
3 - Melt the butter, add the flour and blend.
4 - Stir in the milk and continue cooking, stirring constantly until mixture thickens.
5 - Add the seasoning and cheese cut in small pieces.
6 - Cook until cheese melts.
7 - Reserve half of the sauce to use later.
8 - To the remaining sauce, add the well beaten eggs and mix well.
9 - Pour over the noodles.
10 - Set mold in pan containing hot water and bake in a moderate oven (350 degrees F.) about 45 minutes.
11 - Unmold on a large platter, pour over the remaining hot cheese sauce and fill center with any desired vegetables,
such as peas and carrots, spinach or asparagus tips.
