Creamed Spinach II
1/4 peck spinach
1/2 tsp salt
1/8 tsp nutmeg
1 tbsp butter
2 tsp flour
3/4 cp milk
1 - Pick over and wash spinach thoroughly.
2 - Add salt and cook until tender.
3 - Do not add water.
4 - Chop the spinach very fine.
5 - elt the butter in a saucepan, add flour, and blend.
6 - Slowly add milk and stir constantly until mixture thickens.
7 - Combine with chopped spinach, add pepper and nutmeg, and serve
