1 pint navy beans
1/4 lb salt pork
1 tsp dry mustard
1 1/2 tsp salt
1 tbsp molasses
1/2 cp boiling water
1 1/2 tbsp sugar
1 - Cover beans with cold water and soak over night.
2 - Change the water and cook slightly below the boiling point until skins burst.
3 - To test beans, take a few and expose them to cold air; if shell bursts, they are sufficiently cooked.
4 - Drain off the water and add the salt pork which has been cut into strips.
5 - Put in bean pot having some of the bacon on top.
6 - Mix the mustard, sugar, salt and molasses together and add to the beans.
7 - Add the boiling water.
8 - Cover pot and bake in a slow oven (250 degrees F.) about 6 hours, removing the cover during the last hour.
