Cheese Souffle II Recipe
2 tbsp butter
3 tbsp flour
3/4 cp milk
3 eggs, separated
1 cp grated cheese
1/2 tsp salt
1 - Melt the butter in a double boiler and stir in flour until well blended.
2 - Slowly add the milk and cook until thick.
3 - Add cheese and stir until it melts.
4 - Then add the beaten yolks of the eggs and seasonings and cook for 1 minute. 5 - Set aside to cool.
6 - When cool, add stiffly beaten whites of eggs.
7 - Mix well and pour into buttered baking dish.
8 - Set dish in pan half filled with hot water and bake in a moderate oven (350 degrees F.) about 30 minutes.
9 - Sergve at once.
