Egg Croquettes II
4 hard cooked eggs, chopped
1 tbsp butter
1 tbsp flour
3/4 cp milk
1/2 tsp salt
1 - Melt butter in double boiler, add flour and stir until blended
2 - Add milk and seasonings and cook until mixture is thick.
3 - Remove from fire and add hard cooked eggs.
4 - Set aside to dool.
5 - When cold, shape into croquettes; roll in cracker crumbs and egg and fry in deep hot fat.
