Potato Sponge Bread
4 medium sized raw potatoes
2 tbsp sugar
1 tbsp salt
1 cak yeast dissolved in 1/2 cp lukewarm water
4 cps bread flour
1 - Pare and boil potatoes and while hot, mash finely and rub through a sieve or collander.
2 - Add the sugar, salt, and dissolved yeast cake.
3 - Stir flour into the mixture, beating well.
4 - Add more flour to form a soft dough.
5 - Turn onto a floured board and knead.
6 - Return to bowl, cover and let rise over night.
7 - In the morning, form into loaves, let rise until light and bake in a moderate oven (350 degrees F.) 45-50 minutes,
