Kartoffel Kloesse (Potato Croquettes)
9 medium-sized potatoes
3 eggs, well beaten
1 cp flour
2/3 cp bread crumbs
1/2 tsp nutmeg
1 tsp salt
1/2 lb butter
1/2 cp bread crumbs
1 tsp chopped onion
1 - Boil the potatoes in their jackets until soft, remove the skins and put the potatoes through a ricer.
2 - Spread on a towel for a few minutes to remove moisture, then put them in a bowl and add the salt.
3 - Add the eggs, flour, 2/3 cp bread crumbs and nutmeg.
4 - Mix thoroughly.
5 - Form mixture into dry balls (if mixture is too moist add more bread crumbs).
6 - Drop balls into boiling salted water.
7 - When the balls come to the surface, allow them to boil for 3 minutes.
8 - Remove 1 from liquid and cut open; if center is dry they are sufficiently cooked.
9 - Remove the balls from the liquid and pour over them a dressing made as follows:
10 - Brown the butter in a skillet, add the 1/2 cp bread crumbs and onion and cook several minutes.
