Baked Stuffed Potatoes
3 large potatoes
1 tbsp butter
1 tbps cream or milk
1/2 tsp salt
1/8 tsp pepper
1 egg white, beaten stiff
1 - Bake large potatoes in hot oven(450 degrees F.) about 40 minutes or until soft.
2 - Remove from the oven and cut in half lengthwise and scoop out the inside.
3 - Mash, adding butter, salt, pepper, and cream.
4 - Mix well.
5 - Fold in the stiffly beaten egg white and blend.
6 - Refill potato shells, return to the oven to brown about 10 minutes in a hot oven (450 degrees F.)
