Berks County Potato Dumplings
6 raw potatoes
10 slices bread
1 onion, grated
2 eggs, well beaten
1 tsp minced parsley
salt and pepper
1 - Grate the potatoes.
2 - Soak bread in cold water and squeeze out as much of the water as possible.
3 - Mix together the bread, salt and pepper, grated onion and parsley.
4 - XAdd the grated potato and eggs and mix well.
5 - Form into balls, roll in flour, gently, drop into boiling salted water, and cook in a covered pot for 15 minutes.
6 - These dumplings are excellent with sauerkraut, stewed chicken, or meat.
