Peach Fritters (Parshing Ponskucka)
1/2 cp sugar
2 eggs, well beaten
1/3 cp butter
2 cps flour
3 tsp baking powder
1/2 tsp saslt
1 cp milk
1/2 tsp lemon juice
1/2 tsp vanilla
1 1.2 cps chopped peaches (fresh or canned)
1 - Cream the butter and sugar, and add the eggs and beat thouroughly.
2 - Sift the dry ingredients together and add alternately with the milk.
3 - Fold in the peaches, lemon juice and vanilla.
4 - Drop by teaspoonfuls into hot fat and fry until brown.
5 - Serve with whipped cream or sprinkle with powdered sugar.
