1 lb dried sour schnitz *
1 orange (rind and juice)
2 tbsp cinnamon
2 cps sugar
1 qt cold water
1 - Put the schnitz and the water into a sAucepan and cook to a soft pulp.
2 - Add cinnamon, sugar, orange juice and orange rind, and mix well together.
3 - Stand aside to cool.
4 - Line a pie pan with pastry, fill with the schnitz, and cover the top with pastry.
5 - Bake in a hot oven (450 degrees F.) for 10 minutes.
6 - Reduce the heat to moderate (350 degrees F.) and coninue baking for 30 minutes.
* Note- "Schnitz" is the Berks County Dutch name for one-fourth of an apple.
