Raisin Pie II
1 cp seeded raisins
2 cps water
1 1/2 cps sugar
4 tbsp flour
1 egg, well beaten
juice of 1 lemon
2 tbsp grated lemon rind
1/4 tsp salt
1 - Wash raisins and soak in cold water for 3 hours.
2 - Drain.
3 - Combine 2 cps cold water, the raisins, sugar, and flourwhich have been mixed together, salt, lemon juice and rind and the egg.
4 - Mix thoroughly and cook over hot water for 15 minutes, stirring occasionally.
5 - Cool.
6 - Pour into pastry lined pie pan.
7 - Cover with narrow strips of dough, criss crossed.
8 - Bake in a hot oven (450 degrees F.) for 10 minutes.
9 - Reduce heat to moderate oven (350 degrees F.) and bake 30 minutes.
