Berks County Potato Custard Pie
1 medium-sized Potato
2 tbsp butter
3/4 cp sugar
2 egg yolks
2 egg whites
juice and grated rind of 1/2 lemon
1/2 cp milk
1 - Boil the potato and mash fine.
2 - Add the butter and sugar and stir to a creamy consistency.
3 - Let this mixture cool and then add the beaten egg yolks, the milk, lemon juice and rind.
4 - Mix together well and then fold in the stiffly beaten egg whites.
5 - Pour into a pie pan lined with crust and bake in a moderately hot oven (400 degrees F.) about 25 minutes.
