Lemon Sponge II
2 eggs, separated
1 cp sugar
1 cp milk
3 tbsp flour
juice and rind of 1 lemon
1 tbsp butter, melted
1 - Mix the sugar and flour together and add the lemon juice and rind, slightly beaten egg yolks, butter and salt.
2 - Stir in the milk and mix well.
3 - Beat the whites until stiff and fold into the first mixture.
4 - Pour into custard cups.
5 - Set cups in a pan of hot waterand bake in a moderate oven (350 degrees F.) about 40 minutes.
6 - The sponge may also be baked in pie shell.
